Peel and dice one pound Yukon Gold potatoes in a pot and cook until tender. Drain the excess water and mash the potatoes as smoothly as possible. Add one 15-ounce can butternut squash puree, three tablespoons melted non-dairy margarine or coconut oil, one teaspoon seasoned salt, one teaspoon garlic powder, one teaspoon onion powder, ½ teaspoon poultry seasoning, ¼ teaspoon ground black pepper, two tablespoons corn starch and one tablespoon ground whole flex seeds. Mash the mixture further until all lumps are removed. Transfer the mixture to a piping bag fitted with a star tip and pipe the potatoes into small rosettes on baking sheets lined with parchment paper. Place the sheets in the freezer for an hour until the rosettes are solid. Bake them for around 18 minutes in a 450-degree preheated oven until golden brown. Serve immediately while hot. This recipe should make around 24 fancy potato butternut puffs.
The muffins – Mix together baking powder, nutmeg, baking soda, cinnamon, flour, nutmeg, cloves and salt. Mix together brown sugar and eggs until combined in another bowl. Add vanilla, milk, oil and pumpkin and combine. Add the mixture to the dry mixture and stir until just combined.
The Filling – Beat together vanilla, sugar, cream cheese and one egg yolk until smooth. Layer the muffin mixture and the cheesecake filling by using 1/3 of each; then topping it with 1/3 muffin layer, i.e. one muffin, one cheesecake and one muffin layer into muffin cups.
The Streusel – Mix together melted butter, brown sugar, flour and cinnamon. Sprinkle the mixture on top of the muffins and press them down gently.
Bake the muffins for 5 minutes at a very high temperature (425 F) and then switch to a lower temperature (350 F) for about 15 minutes or do the toothpick test. Enjoy.
